My first week back on track with Slimming World and its good news! My food optimising meals paid off! Link to Mushy Pea curry recipe and the chicken and potato curry I cooked this week too.

Yes, it was a good week. I thought I had blown it yesterday when I just had a really bad day and nibbled on naughty food. I felt rubbish by the evening and really thought I had put my good week to waste.

However, Wednesday night weigh in arrived and off to my Slimming World group I went. Apart from my bad day yesterday I have had quite a good week. I've got back into the routine of having breakfast which is one meal I found all to easy to skip. Lunch has usually been the same Ryvita base with a variety of free foods, extra light Laughing Cow cheese and a bit of pickle. With dinner I've been extra good this week. One night we had the ever popular Mushy Pea Curry (recipe here Mushy Pea Curry recipe blog post), the following night we had bacon, poached egg, Slimming World chips and mushrooms, then it was on to a chicken and potato curry recipe that I found online and another night I just had a soup whilst my husband shared Quesedillas with Thing 2, it was torture to watch!!

So tonight at weigh in I lost 1.5 lbs, yay. I was so pleased. There's always that panic that sets in as you are queuing ready to weigh in when you start doubting your week and whether you have food optimised enough, did my bad day yesterday completely ruin my whole week, am I going to step on the scales and be hugely disappointed.

I was happy to see any loss to be honest. Last week I gained 3 lbs which I fully expected as it had been Christmas and I hadn't been to group since November so I had really not been 100% with the plan. This week I'm so glad to see things now going in the right direction and I can hopefully stay on track to reach my new target. The 1.5 lb loss has certainly given me a boost and starts a new Slimming World week with a positive start.

Now it's onwards and upwards (or downwards!) to lose the next few pounds.

Here is the recipe for the chicken and potato curry we also tried this week too.

Ingredients;

794 grams of skinless and boneless chicken breasts or thighs

1 onion

170g baby leaf spinach, roughly chopped

2tbsp of medium or hot curry powder

4 large potatoes, peeled and chopped into bitesize pieces

400g can of chopped tomatoes

Salt and freshly ground pepper

A handful of chopped coriander and mint leaves

397ml of water

METHOD

Place a large, non-stick frying pan over a medium heat. When hot add the onion, chicken, potatoes, spinach and curry powder, stir to mix well. Stir-fry for 2-3 mins.

Add the chopped tomatoes and 397ml (14fl oz) of water and bring to the boil. Cover, reduce the heat to low and cook gently for 25-30 mins, or until the chicken and potatoes are cooked through and tender

Remove from the heat and season well with salt and black pepper. Stir in the chopped herbs and serve immediately.

I would recommend not using the full amount of water mentioned as it makes for a very runny curry. You can easily use less than half of the water recommended I also added a veg stock cube to the water for a bit of flavour. We also added a couple of garlic cloves to the recipe too.
